All Blue Purple Majestyis an old heirloom, beloved for the bold colour that holds up to roasting and boiling (although stewing tends to wash the colour out). The blue colour is an ancient adaptation found among the original potatoes that grew at high altitude and in exposed locations, necessitating protection from scalding. From a human perspective, the blue pigment has two benefits. First, exposure to sunlight causes the greening of potato tubers, which causes the toxin solanine to accumulate - but blue potatoes are protected from this. Secondly, the blue pigments are antioxidants called anthocyanins, which considered very healthy for us! All Blue potatoes have even greater tolerance for cold than most other types.
Blue potatoes have a delcious flavour, described by some as nutty or hearty. We love them!
Dry potatoes on the ground for 2-3 hours after harvesting (if weather is fine) so skin will harden before storage. Store potatoes in a cool, dark place. Ideal storing temperature is between 3-5º C(35-40º F).
